Bariloche is a year-round destination, but depending on what you want to do, there are ideal times to better work around weather and terrain conditions.

Cristmass and New Year are the most popular, as it coincides with vacation time and the middle of the Patagonian Summer.
Shoulder season, however, is highly recommended if you have that flexibility. October till early December, and then March through early May are great times to enjoy the colors of the fall or the snow capped scenery of the spring, and you get to avoid the crowds and get better rates!
